
Blueberry Filling
Ingredients
2 cups Blueberries
3/4 cup Sugar
1 and 1/2 tablespoons Lemon Juice
1/3 cup Water
Slurry
1/3 cup Water
2 tablespoons Cornstarch
Directions
1. Place blueberries, sugar, lemon juice, and water in a medium-sized saucepan and cook on medium-high heat until sugar is dissolved.
2. Using a potato masher or fork, mash the blueberries, leaving some chunks.
3. To make the slurry, add the cornstarch to the water in a small bowl and stir until the cornstarch is completely dissolved. It is important to make sure there are no lumps left. Then add this mixture to the blueberry mixture while stirring to combine well.
4. Cook to your desired thickness, just remember that the mixture will thicken as it cools.
5. Once cooled, you can pour the filling into your desired container for storage. I love using glass jars for this.
6. This is great in cupcakes, as a filling for cakes, as a topping on cheesecake and pancakes, great with yogurt, and even on top of ice cream. So many delicious options.
