No-bake cookies with oats, chocolate, and peanut butter, ready to eat.

Old Fashioned No Bake Cookies

There’s something special about old-fashioned no-bake cookies. Quick, simple, and oh-so-delicious, they’re a beloved treat for busy bakers and sweet-tooth enthusiasts alike. These cookies don’t require an oven, making them a perfect choice for those hot days when you want something sweet without turning on the heat. Packed with chocolatey, peanut butter goodness and hearty oats, these cookies are a nostalgic favorite that takes us back to simpler times.

Ingredients

2 cups Sugar (451 grams)

1/2 cup Evaporated Milk (122 grams)

1 Stick Unsalted Butter (113.4 grams)

1/2 cup Peanut Butter (126 grams)

4 TBSP Cocoa Powder (good quality)

2 tsp Vanilla Extract

2 cups Quick Cooking Oats (190 grams)  You may want to increase the amount of Oats if you want a thicker cookie.

 

Directions

Over medium heat, add butter, sugar, evaporated milk, and cocoa powder to a medium size saucepan.

Stir until all the butter has melted

Once mixture starts to boil, stop stirring, and cook the mixture to 230 degrees F.

At 230 degrees remove the saucepan from the heat and stir in peanut butter until it is completely melted and mixed into the mixture.

Add vanilla and stir until incorporated

Add quick cooking oats and stir until incorporated

I let the mixture cool down for a few minutes before scooping.  If the mixture is really warm the cookies will spread more

Line a sheet pan with parchment paper or wax paper and start scooping the cookies onto the pan

Scoop quickly so the mixture doesn't set up before you have them all scooped out.

Mixture usually sets within 30 minutes

This will yield 24 cookies
