I love grape freezer jam, and since Concord grapes are so hard to find, I made some modifications, and this jam turned out delicious!
Ingredients
2 pounds Thomcord Grape Jammers (Closest thing to Concord Grapes)
7 cups Sugar
¼ cup Pure Concord Grape Juice to cook with Grapes
1 ¼ cups Pure Concord Grape Juice to cook with the Sure Jell
1 tablespoon Lemon Juice
2 boxes Original Sure Jell Premium Fruit Pectin (Yellow Box)(1.75 oz each box)
Directions
Clean and destem your grapes.
In a large stainless steel pot, add ¼ cup Concord Grape Juice and the grapes together. Cook on medium heat for about 3-4 minutes, just enough to soften the skins.
Remove from the heat and process in a blender or food processor until fairly smooth.
Pour into a bowl and allow the mixture to cool for a few minutes.
Add the sugar and stir to combine. Make sure the sugar is not clumped up.
Add the Lemon Juice and stir to combine.
Allow that to sit for 20 minutes, stirring occasionaly.
To a pot, combine 1 ¼ cups Concord Grape Juice with 2 boxes of Original Sure Jell and stir until combine. On a medium-high heat bring this mixture to a boil. Once this mixture is boiling you will need to boil this mixture for 1 minute.
Remove the Sure Jell mixture from the heat. Add it to your grape mixture and stir for 3 whole minutes to make sure everything is combined.
Pour into your clean glass jars, leaving ½ inch at the top because the mixture will expand slightly when frozen. Store them in the freezer.
I have stored these in the freezer for 1 year and even longer without any issues.
