Squash Relish

Ingredients

  • 7 medium Yellow Squash (or 10 small)

  • 4 medium Onions

  • 1 large Green Pepper

  • 1 large Red Pepper

  • ¼ cup Kosher Salt

  • 3 cups Sugar

  • 2 Cups Apple Cider Vinegar

  • 2 teaspoons Celery Seed

  • 2 teaspoons ground Turmeric

Directions

  1. Shred all of your vegetables and add the salt and gently stir to incorporate. Then add enough water to cover the mixture. Cover and place in the refrigerator for 1 hour.

  2. Remove from the refrigerator and rinse the mixture well and strain it to remove as much moisture as possible.

  3. In a pot combine sugar, vinegar, celery seed, and Turmeric, stir, and bring to a boil. Turn the heat off and let it sit for 3 minutes.

  4. Add the vegetables and bring to a boil. Once it gets to a rolling boil, reduce the heat and simmer for 5 minutes.

  5. Let the mixture cool. Refrigerate or can following the proper canning procedures.
