Chocolate Caramel Crisp

Chocolate Caramel Crisp Cookies

Try this buttery, crumbly, melt in your mouth shortbread style cookie!

2 sticks Butter, softened (227 grams)

1 1/2 cup Powdered Sugar (183 grams)

1/2 tsp vanilla extract

2 1/4 cups All Purpose Flour (288 grams)

1/4 tsp salt

1 cup Rice Krispie Cereal (36 grams)

3/4 cup Chocolate Chips (124 grams) I use 3/4 cup chopped chocolate and 1/4 cup chocolate chips

2 Large Caramel Turtles, chopped up or (8 caramel candies like Rolo chopped up)



Preheat oven to 350 degrees F

Beat butter and powdered sugar together 

Add Vanilla and Salt and mix until combined

Add Flour in 2 parts, mixing in between each part but don't overmix.  You can do the final mix by hand.

Stir in chocolate chips and caramel turtle chunks or chopped caramel candies

Use your hands or a spatula to fold the batter to ensure all ingredients are mixed

Scoop cookies into balls and flatten each cookie slightly

Bake 12-14 minutes until lightly golden brown
