Chocolate Molten Lava Cake
Yields 9 (5 inch Molten Cakes)
339 Grams Butter, melted (3 sticks unsalted)
504 grams ( Use 1 + 1/2 cups milk chocolate and 1 + 1/2 cups semi sweet chocolate)
6 Eggs
6 Egg Yolks
150 grams sugar (3/4 cup Sugar)
2 tsp kosher salt
9 TBSP All purpose Flour (67.5 grams)
Directions:
Melt butter and Chocolate together and let cool slightly
Beat eggs, sugar and salt on medium to high until thick and pale (use a whisk attachment)
Fold Chocolate in with the yolk mixture. FOLD ONLY - DON NOT STIR
Add in flour and FOLD until incorporated
Optional: Take melted butter and coat the inside of your baking tin and sprinkle with a little sugar
Bake at 450 for 6-8 minutes until edges are set
Let cool for about 8-10 minutes before serving.
Optional: Sprinkle with powdered sugar or serve with ice ice cream
