Dawn's Cinnamon Rolls

Dawn’s Cinnamon rolls


1/2 cup Granulated Sugar (100 grams)

3.5 tsp Kosher Salt

5.5 TBSP Unsalted Butter - 75 degrees

1 large Egg

1/2 Tsp Vanilla Extract

1 and 3/4 cups All-Purpose Flour (226.8 grams)

1 and 3/4 cups Bread Flour (226.8 grams)

2 tsp Instant Yeast

1 cup Whole Milk (warmed to 75 degrees)



Cream Sugar, Salt, and Butter on High with Paddle attachment Add Eggs and Extract until smooth

Add Four, Yeast, and Milk Mix until dough forms a ball Switch to dough hook and increase to medium speed (6-10 minutes)

Dough should be silky, supple and tacky but not real sticky You can add some all-purpose flour if the dough is too loose

Dough should pass the window panne test and register between 77-81 degrees F

Place dough ball in oiled bow- cover and place in a draft-free area until doubled in size (can take up to 2 hours)

Roll them out into a rectangle Spread cinnamon schmear or your favorite filling

Cut your strips and roll up Place on baking pan (lined with parchment paper) and let them proof (Use finger-tip test to see if the dimple stays in the dough.

This lets you know they are ready to bake) Bake at 350 degrees F for 20-30 minutes or until the internal temperature of the cinnamon roll reads 200 degrees F

Top with your favorite icing Yields 6 Jumbo Cinnamon Rolls or 12 regular

 Dawn’s Cinnamon Filling


1 and 1/2 sticks Unsalted Butter (melted) (170 grams)

1/2 cup Dark Brown Sugar (113.4 grams)

4 TBSPS All-Purpose Flour

3 TBSP Cinnamon (14 grams)

1/4 tsp Kosher Salt


Heat Butter until almost partially melted Add all other remaining ingredients and mix until well blended Use as the filling for Dawn’s Cinnamon Roll Recipe


  Cream Cheese Icing


6 oz Cream Cheese (Room Temperature)

1/3 cup Unsalted Butter, Softened

2 cups Powdered Sugar

1/2 TBSP Vanilla Extract

Beat together until smooth and fluffy.
