Mama’s Baked Chicken

YIELDS: 6 Leg Quarters

PREP TIME: 15 mins

COOK TIME: 1 hour 30 mins

 

INGREDIENTS:

6 Leg Quarters

Kosher Salt, to taste

Pepper, to taste

1 and ½ sticks Butter, salted or unsalted

Any other seasoning you prefer!

 

DIRECTIONS:

Salt and Pepper both sides of the chicken.

Place chicken quarters, skin side down, in the pan.

Place slices of butter all over the chicken.

Add water or chicken broth to the bottom of the pan. Should be ¼ inch high.

Cover with aluminum foil.

Bake at 375 degrees for approximately 45 minutes.

Remove the aluminum foil and turn the chicken over to skin side up.

Place back in the oven, uncovered, and bake until 175-180 degrees F or approximately 45 more minutes.

Chicken should be tender and pull away from the bone easily.

Take some of the melted butter from the bottom of the pan and pour it over the chicken.

If your chicken is reaching the desired temperature but the skin is not brown, place it under the broiler and cook until the skin gets to the desired color.
