Mrs. Susan's Tomato Pie
2-3 Large Tomatoes (don't slice them to thick)
3/4 cup Mayo (Dukes Mayo)
1/4 cup Sour Cream
1 cup Cheddar (I used 1 and 3/4 cups extra sharp cheddar and 1/4 cup Italian Blend cheese)
1 cup Mozzarella
3 Green Onions, diced small
Italian Seasoning or Basil Seasoning

Directions
Slice tomatoes and lay on paper towels for at least 20 minutes. I like to take a paper towel and press down on the tomatoes as well.
Bake a Pie Shell and let it cool.
Add shredded Parmesan cheese to the bottom of the pie crust, about 2-3 tablespoons. This helps to soak up any liquids from the tomatoes. I used Italian blend cheese for this.
Add sliced tomatoes on top of parmesan cheese. Make sure they overlap.
In a bowl mix Mayo, sour cream, Diced green onion
Salt and pepper to taste
Mix good and put on top on tomatoes, covering them completely
Sprinkle some Italian seasoning and basil on top of cheese mixture.
Sprinkle a little parmesan on top of basil too.
Cook at 350 degrees until brown.
