Ingredients:
- 1 green bell pepper, sliced into 1/2-inch slices
- 1 red bell pepper, sliced into 1/2-inch slices
- 1 yellow bell pepper, sliced into 1/2-inch slices
- 2 Vidalia onions, sliced into 1/2-inch slices
- 2 tbsp oil (canola or olive oil)
- Extra Oil for searing in skillet
- Fajita seasoning (your favorite brand)
- 1.5 lb chicken tenderloins, diced (tendon removed)
- Queso cheese (your favorite brand)

Prepare the Vegetables:
Drizzle a little oil over the sliced bell peppers and onions, then sprinkle them generously with fajita seasoning. Toss to coat evenly. -
Cook the Vegetables:
Heat a cast iron skillet over medium-high heat and add a small amount of oil. Once hot, sauté the vegetables until they reach your desired level of tenderness, about 5-7 minutes. Remove the vegetables from the pan and set aside. -
Season the Chicken:
Drizzle a little oil over the diced chicken and sprinkle with fajita seasoning. Toss to coat. -
Cook the Chicken:
In the same skillet, add the seasoned chicken and cook over medium-high heat for 6-8 minutes, until the chicken is fully cooked and golden brown. -
Combine and Heat:
Once the chicken is almost done, add the sautéed vegetables back into the skillet. Stir everything together and cook for an additional 2-3 minutes to ensure the dish is hot throughout. -
Serve with Queso:
Drizzle the fajitas with your favorite queso cheese, then serve immediately with warm tortillas and any other desired toppings.
