Making bread with freshly milled flour is absolutely amazing. I highly recommend this recipe.

Ingredients
- 1230 grams Hard White Wheatberries
- 240 grams Kamut
- 540 grams Water
- 114 grams Butter, room temp (75 °)
- 168 grams Honey
- 5 teaspoons Kosher Salt
- 4 eggs, room temp
- 60 grams Lemon Juice
- 24 grams Instant Yeast (8 teaspoons)
- 40 grams Vital Wheat Gluten (1/4 cup)
- 17 grams Sunflower Lecithin (2 TBSP)
- *500 grams Evaporate Milk (Only used to Make the Paste)

- 120 grams Flour
- (Once You Mill your berries, measure out 120 grams for the paste) Once You Mill your berries, measure out 120 grams for the paste)(I mill all berries together and then measure 120 grams fir the paste)
- 500 grams Milk (Evaporated)
Directions
- Make Paste by combining 120 grams of flour blend (or 240 grams if doubling the recipe) and the 500 grams of evaporated milk (or 1,000 grams if doubling the recipe) together and cook on medium heat until it forms a paste. Remove from the heat and set to the side to cool down before using.
- In your mixer, combine water, butter, honey, salt, eggs, and lemon juice together and beat until combined.
- Add the flour paste and the flour to the liquid and mix until combined.
- Cover and Autolyse approximately 30 - 45 minutes.
- Add yeast and mix to incorporate.
- Knead bread (without the cover on the Bosch Universal) for 6-8 minutes or until Windowpane is reached.
- You may need to add water to your dough if it is too stiff. You want a tacky dough but it should not be extremely wet. Add room temperature water to loosen the dough and add more flour to firm it up. If you add either ingredient, give the mixture time to combine the ingredient well to determine if you need to add anything else.
- Cover and Rise until doubled in size (1-2 hours).
- Punch dough down and form into preferred shape and place in pan.
- Rise until proofed.
- Bake at 350 degrees F until internal temperature is 195 degrees.
- When you remove from the oven, turn the bread out of the pan onto a cooling rack and turn the bread on it’s side to cool.
