Ingredients
- 1.5 pounds Chicken Breast, sliced
- 1 Green Bell Pepper, sliced
- 1 Yellow Bell Pepper, sliced
- 1 Red Bell Pepper, sliced
- 1 Large Onion, sliced
- Fajita Blend seasoning
- 2 TBSP Oil for sautéing
- 2 TBSP Butter (optional)
- 2-3 tsp Lime Juice (optional)
- Optional Toppings: Monterey cheese, Sour cream, Avocado/guacamole, Green Onion
Instructions
- Slice the peppers and onions into strips and set them aside in a bowl.
- Place the sliced chicken in a separate bowl and sprinkle it well with Fajita Blend seasoning.
- Sprinkle the sliced peppers and onions well with Fajita Blend seasoning.
- In a sauté pan, add 1 TBSP oil and 1 TBSP butter. Cook the peppers and onions over medium-high heat until they reach the desired tenderness (approximately 7 minutes).
- Remove the sautéed peppers and onions from the pan and set them aside.
- In the same sauté pan, add the remaining 1 TBSP oil and butter. Cook the chicken over medium-high heat until it is done, approximately 6-8 minutes in total.
- Just before the chicken is done, add the sautéed peppers and onions back to the pan to warm them up.
- Drizzle with lime juice (optional).
- Serve the Fajita Chicken with warm tortillas and top with your choice of optional toppings, such as Monterey cheese, sour cream, avocado/guacamole, and green onions.
