Shrimp Fajitas

Shrimp Fajitas

1.5 pounds Shrimp, cleaned and deveined

1 Green Bell Pepper, sliced

1 Yellow Bell Pepper, sliced

1 Red Bell Pepper, sliced

1 Large Onion, sliced

Fajita Blend seasoning

2 TBSP Oil for sautéing

2 TBSP Butter, optional

2-3 tsp Lime Juice, optional



Slice peppers and onions into strips and set aside in bowl

Place cleaned and deveined shrimp in a separate bowl

Sprinkle vegetable well with fajita blend

Sprinkle shrimp well with fajita blend

Place 1TBSP oil and 1 TBSP butter in sauté pan.  Cook on medium high until the vegetables are at the desired tenderness. (Approximately 7 minutes 

Remove from pan and set aside

Place other TBSP oil and butter in sauté pan.  Add shrimp and cook on medium high heat until shrimp are pink, approximately 5-6 minutes total

Just before the shrimp are done add the vegetables back to the pan to warm back up

Drizzle with lime juice is optional

Serve with warm tortillas and topping of choice
