These mini tart shells are perfect for any gathering or party and can be used to make sweet or savory treats. Some suggestions would be strawberry tarts, caramel pecan tarts, no-bake cheesecakes, chocolate or lemon pies, pecan tassies, chicken salad cups, and so much more.
Ingredients
4 ½ cups Sugar (227 grams)
2 cups Butter, Unsalted (4 sticks or 454 grams)(cool but not quite room temperature)(I use unsalted, but it really doesn’t matter for this)
1 ½ large Eggs (crack 2 eggs and beat together and most of the egg mixture) You don’t have to be perfect here.
5 ¼ cups All-Purpose Flour (I use King Arthur Flour)(680 grams)
Directions
Preheat oven to 350 degrees F
In a mixing bowl, combine the sugar, butter, and eggs together until smooth.
Add the flour and mix until just combined. Do not over mix.
Shape into individual tart shells or make 1 regular tart shell. This recipe yields approximately 75 shells. I roll the dough to approximately 1/8 of an inch thick. I use a mini muffin pan when making mini tart shells. I cut each piece of dough with a 3-inch round cutter.
Cut out parchment paper approximately 3 x 3 inches and press them into each shell and pour dried black beans or pinto beans into each one that is lined with parchment paper. This will help the tart dough to cook properly without puffing up or falling down on the sides while being cooked. The beans will act as your pie weights.
Place in the oven and bake until the crust starts turning brown. This may take about 12-15 minutes.
Remove from the oven and carefully remove the parchment paper, with the beans, out of each tart shell. The beans can be reused as long as they are not soiled or wet.
Place the tart shells back in the oven to finish baking and golden brown all over. This may only take 10-12 minutes. Watch closely.
Remove from the oven and once cooled you can remove the tart shells from the pan.
Store in an airtight container for 3-4 day or in the refrigerator to last longer.
